I would probably just write super long fanfics for all my favorite series and games. XD
I really like Protoman, especially the original.
Back on topic... shrines... shrines... I guess The Girl Who Leapt through Time, the Luna Pen (Sailor Moon) and a shrine to my favorite fictional legendary swords...

That'd be a huge shrine! :O I think a good way to organize that is go by the fandom theory of timeline splits to separate the worlds. :D And I've played Skyward Sword; I could totally help you with it. :)

Definitely Richard. I had a lot of good ideas for that one. I've even had a layout ready and everything. Sadly the fandom (and the developers themselves) virtually depressed me, and now I can't look at the game without feeling down. If I could get that excitement back, and this time ignore the fandom, I would definitely work on it.
I've always wanted to expand my Majora's Mask fanlisting to becoming a full-fledged general fansite, but alas, time and effort. Majora's Mask is my favorite Zelda game, so it would be quite a feat if I ever get it up.
(That's already two from my totally-not-fulfilling New Year's Resolution list, oops.)
Oh, and Girouette! Fuck Zero, he's my favorite Mega Man character ever, and he just appears for an hour or so before dying. XD Of course, most of why I like him so much is because of my headcanon, speaking that he didn't necessarily had time to flesh out.
Hmmm... Maybe Prier from La Pucelle? She's one of my favorite RPG heroines because even though she's from a pretty old game, she avoided a lot of aggravating cliches that most heroines have - most being that she is significant to the story through her character, and not her super special snowflake powers/origin. That one I would need a lot of motivation to replay La Pucelle again... I'm not too much into SRPGs lately, unfortunately.
I admit that I actually really like Princess Peach despite not being a good example for feminists, and wouldn't mind making a fansite for her, but her canon is waaaaayyyy too much for me to tackle.

I've never really properly tackled shrines to characters from really loooong series due to the lack of the time and the fact that I like to be comprehensive :( I hope to remedy this soon though!
I'd probably want to attach a shrine to each fanlisting I own as well! XD; (never gonna happen though, sadly...!)

Fun topic idea, Destinie!
- Lots of Media: If I had all the time the world, I would add tons of media to all my shrines. That means extensive screen captures, pixel adoptions, icons, wallpapers, silly banners and asking artists permission to display their fanart. I really enjoy seeing that in other fansites, so I'd love to have more in mine.
- Aeris of Final Fantasy VII: This is the shrine I've wanted to make since the very beginning, before my first shrine. Since I wanted to make it really good, I kept making other shrines, thinking I wasn't ready to shrine a beloved character yet. The task just gets more and more daunting the longer I put it off.
- Alice in Wonderland: I've played with the idea of making a fansite documenting every version of Alice that I could find. It'd be a fun site, and something very different from my usual work.
- Fansite for Seahorses: I was very much charmed by the Ocra Whale shrine that was submitted in a previous marathon. If I had all the time in the world, I'd make a website for my favorite animal, seahorses.

@Ava I think an Alice in Wonderland shrine would be great! I'd really love to see that if you ever had time to make it. It'd be really extensive, though, like one of those shrines you could run your entire life. XD
@DubiousDisc I'd love to do that cat-pokemon site! So far, here's my list: Meowth, Persian, Mewtwo, Mew, Espeon, Skitty, Delcatty, Shinx, Luxio, Luxray, Glameow, Purrugly, Purrloin, and Liepard. I like all cat Pokemon except for Skitty and Delcatty. There's something about them that I just don't like. xD;
There's a lot of dog-type ones. Someone got up on me on Deviantart a while back because I said the trio of Gold/Silver were dogs and they scanned a page from an UNOFFICIAL guide book that called them cats. I was under the impression they were based on Shisa and due to the anatomical structure of Entei and Suicune, I consider them dogs. (Raikou is debatable.)

Ohh lord I have so many things I'd make shrines to.
1. MASS EFFECT - I love, like, every character ever (except Liara...) so I'd make a Wrex shrine and a Garrus shrine and a Thane shrine and a Tali shrine and an EVERYONE SHRINE. Someday I do wanna make something ME related but lol so lazy.
2. MORE FFXII - it's the best game ever and ahh, I had a Gabranth shrine in the works but my motivation just died. I wish more people would make FFXII shrines :(.
3. Okami! - if I had all the time in the world I'd make a big Okami site with a focus on Japanese mythology, because I love me some mythology.
4. Skies of Arcadia - I wanna make a Vyse/Fine/Aika tribute, because they're the best JRPG OT3 ever. I made a layout but I don't think I'll ever finish anything.
5. Yuna of FFX - I'm sure people have figured out I'm building a Paine shrine by now, but I've been plotting a Yuna shrine (called Morning Glory) forever. There's just so much material to cover and I don't have the time. Plus there's lots of Yuna shrines out there so I don't feel so bad about not making one.

I love how there's quite a few people mentioning sites for "unusual" subjects. I'd so love to see them popping around. I know one of my next project is probably going to be a series of one-pagers about birds. I didn't mention it in this list because it's more likely to happen than any of the others, haha.
Maybe there should be a marathon for "odd" fansites!
Destinie: Hah, that's an interesting list, as expected. XD Everyone seems to have different opinions as to which Pokémon are cat-like, except for the few straightforward ones. For example, I wouldn't consider Mewtwo a cat. Some people (not me), however, would consider Sneasel a cat, its original name being Nyuura and all. Once I've heard someone refer to the Shinx line as mice, which made me go full wtf considering that Shinx is pretty much a tribute to Kimba. And yeah, the entire legendary beast deal. XD Personally I see Entei and Raikou as lion- and tiger-like, Suicune as its own thing (ungulate with feline traits, actually), but they ARE mythical beasts... Ha, if you make this site, maybe you should have a page about the huge cat Pokémon controversy. XD
Oh wow, I just mentioned your project to my best friend and she said that she had seen a fansite like that once. :o
Ava: Seconding on the Alice site, that would be incredible! And seahorses. Aww.
Varen: Nothing wrong with liking a character because of headcanon! /looks at own fansite for a Quake character who is basically all headcanon
Your mentioning of Princess Peach leads me to the huge question about shrining "problematic" characters that would probably go too much off topic, so I think I'll open a new thread for that later...
Mikari: I want that shrine for swords!!
Michelle: Please, Skies of Arcadia! I haven't finished playing it yet, but I know quite a few people who would tear their hair out for a SoA fansite.
